Smokey Aubergine Dip

Summer has arrived and it's definitely picnic weather here in London! To give your next feast in the park a healthy Neat twist, we've given this Middle Eastern style, smokey aubergine dip an extra boost of protein. It's perfect for dipping crisps or crudités, or smearing in a falafel wrap.

METHOD:

Place your aubergines on the BBQ or on the open flame of a gas cooker to cook until the flesh inside is soft and the outside is slightly charred. This could be done on a normal grill but won't give the same smokey flavour.

Once cooked, leave to cool before blending with all your other ingredients until smooth. Serve with a drizzle of tahini and pomegranate seeds.
