Pancake Day Blueberry Stack

We're not messing around here. This is what we call a proper pancake stack: thick and fluffy and best served with lashings of maple syrup! 

Because when it's pancake day tomorrow, breakfast should never be done by halves!

METHOD:

Mix together the flour, protein powder, baking powder, sweetener and salt in a large mixing bowl. Next, stir in your milk and flax egg and whisk until smooth. Stir in half your blueberries. 

Heat a tbsp of oil in a large frying pan on a medium heat. Once hot, add two tablespoons of your pancake batter to the pan in a circular shape.

Once the top starts to bubble, the pancake is ready to flip! Flip it over and cook until both sides are golden brown. Repeat with the rest of the mixture, stack 'em high, and cover in maple syrup! 

This recipe will serve 2, or 1 very hungry person. We're not judging, promise.
