Veggie Christmas Stuffing

This homemade, veggie-friendly, stuffing recipe is the perfect accompaniment for your Christmas dinner. They're a delicious combination of sweet apricots, festive hazelnuts and Neat Nutrition Naked Vegan Protein. 

Veggie Christmas Stuffing Balls | Neat Nutrition

METHOD: 

Preheat the oven to 175c. Place a frying pan on a medium heat and fry the onions in the butter. As the onions start to cook, add in the hazelnuts and fry until golden.

Remove the pan from the heat and add the apricots, oat flour, Neat Nutrition Naked Vegan Protein and parsley.

Mix in the egg and season well, before rolling into small balls. 

Place the balls in a greased dish and bake for 30 mins until golden.

 

Veggie Christmas Stuffing (serves approx. 8)

 

  • 1 large onion, finely chopped
  • 50g grass-fed butter
  • 50g hazelnuts, finely chopped
  • 140g dried apricots, chopped
  • 150g oat flour 
  • 25g Plant Protein (Unflavoured)
  • 1 egg, beaten 
  • 20g fresh parsley, chopped 
  • Salt and pepper
