Sun Dried Tomato and Avocado Canapés
We've previously made these protein-packed blinis for guests at Soho Farmhouse, topping them with smoked salmon and cremé freché, and they went down an absolute treat! So with the Christmas party season in full swing and weeks of entertaining ahead of us, we thought it would be a great time to share a tasty canapé recipe that's filled with Neat protein and much tastier than the frozen food and soggy sausage rolls that are usually on offer...
METHOD:
Simply place your egg, oats, protein powder, salt and milk in a blender and blitz until smooth.
Lightly cover a frying pan with oil and place it on a medium heat. Once hot, start making small blinis by frying a couple of tsp's of batter in the pan until golden brown on both sides.
Whilst these are cooling, mash up your avocado into chunks, mixing with a squeeze of lime juice, sea salt and chilli flakes. Dollop the avocado onto your blinis before placing chopped sun dried tomatoes on top. Serve with a sprinkle of chilli flakes and a drizzle of oil!
